Barbecued bacon wrapped onion slices, a most wonderful compliment to any burger on the barbecue.

It’s a very simple recipe my wife Pirjo found. And it’s so simple that even I can do it.

I am not providing a burger recipe for most of you have your own favourites. The unique part of this recipe is the bacon wrapped onion slices.

1. Wrap the onion slice in bacon.

2. What a wonderful aroma.

3. Bacon wrapped onion slices warm and keeping an eye on the burgers below.

4. Nice flavourful finish!

You will need:

1 Spanish onion

1 lb. bacon

6 of your favourite hamburgers

Slice the onion into about 1/4 inch slices.

Wrap 3 or 4 slices of bacon around the onion slice.

Try to crisscross or weave the bacon around the onion so as it holds together better when barbecuing.

Cook on low heat so the bacon doesn’t burn to a crisp before the onion cooks. (Unless you like it that way).

When they are done, remove from grill and keep warm.

Then cook your hamburgers. When done, place your bacon wrapped onion slice on your burger and enjoy.

I like this meal with a chilled California White Zinfandel. Or a lighter fruitier red like a Pinot Noir.
