Sweet Potato Fries with Chipotle Dip

Great for a savoury snack or side dish!
Ingredients:
1/3 cup sour cream
2 tsp. Tabasco chipotle sauce
2 tsp. lime juice
2 tbsp. chopped chives (divided)
2 large sweet potatoes or yams (uniform in size for easy slicing)
Olive oil
1 1/2 tsp. ground cumin
Sea salt and pepper
Method:
Preheat oven to 425’F on convection bake.
Chipotle Dip:
Stir sour cream, Tabasco chipotle sauce, lime juice and 1 tbsp. chopped chives together in a small bowl. Cover and chill
Sweet Potato Fries:
Wash, then slice sweet potatoes into long thin slices resembling French fries about 1/2 and 3/4 inch wide (leave skins on). Place in a bowl and toss with olive oil, cumin, salt and pepper. Spread out in a single layer on a parchment paper-lined baking sheet. Place in oven and cook for 20 to 25 minutes, checking at 15 minutes and flipping fires, for even cooking. Place chipotle dip in a small bowl and top with remaining chives to serve with fries
Serves 4 people.
