How to Build a Go-To Wine Selection for Hosting

Few things take the fun out of hosting faster than realizing you have nothing to pour just as guests are arriving.

The good news?

You don’t need a huge wine collection. A small lineup of dependable bottles can cover almost any gathering, and with the holidays around the corner, now is a good time to start putting one together.

The Core Five

Something sparkling: Prosecco or Cava is always handy for welcoming guests, making a toast, or serving alongside dessert.

A crisp white: Sauvignon Blanc or Pinot Grigio works beautifully with appetizers, seafood, and cheese boards.

A rounder white: Chardonnay or dry Riesling gives you something with a little more body for roast chicken, creamy pasta, and richer dishes.

A softer red: Pinot Noir or Merlot tends to be easygoing and food-friendly, making either a good choice for everything from pizza to roast turkey.

A bolder red: Cabernet Sauvignon or a Cabernet-Shiraz blend is worth having around for beef, roasts, burgers, and heartier meals.

How Much Should You Have?

For dinner, planning around half a bottle per guest is a useful starting point. Keeping two bottles of each of your favourite styles on hand also means you’re less likely to run out — and whatever survives the evening can always become next week’s wine.

Chill your whites and sparkling wines ahead of time rather than remembering five minutes before everyone arrives.

Open your reds a little earlier, and keep at least one lighter or alcohol-free option around if you know your guests have different preferences.

You don’t need a cellar to be ready for company.

A handful of wines you know and enjoy, paired with good food and good company, is more than enough.
